The starter, a local fresh vegetable cream soup is enhanced by aged balsamic vinegar and young rabbit confit. Chef Frederic Boulay's skill at employing a complex range of complimentary flavors are particularly evident in his starter dishes where savory (the creamed vegetables) turns to sweet (the aged balsamic vinegar). The second course might be an avocado mousse and cucumber carpaccio topped with salmon tartare and snow crab. The main could be Halibut roasted with seared green asparagus served over an orange infused saffron polenta.
