A Hidden Gem in Quebec City: Le Canard Goulu

One of chef Martin Guillemette's creative dishes at Le Canard Goulu restaurant, in Quebec CityLe Canard Goulu is a Muscovy duck farm located on the South side of the St. Lawrence River, in the small village of St-Apollinaire, about a half-hour outside of Quebec City. I have been a fan of their products for many years, and the opening of their shop and restaurant in Sillery, just east of Quebec's city center, has changed my gourmet habits. At the shop, you'll find their whole range of duck products, from whole birds to prepared dishes, while at the restaurants, you'll enjoy the skillfully prepared creations of chef Martin Guillemette. The restaurant is open for lunch from Tuesdays to Fridays, which is a great way to sample Guillemette's cuisine, but the true gem is the Friday night tasting menu, which has become one of the best gourmet experiences in the city.
